Pan-Seared Chicken Marsala with Mushrooms
Tender chicken breasts pan-seared to a golden finish and simmered in a savory mushroom and Marsala wine sauce that releases a rich, earthy aroma.
INGREDIENTS
5 oz Chicken breast
1 tbsp Extra virgin olive oil
1 cup Cremini mushrooms
1 small Shallot
2 cloves Garlic
0.25 cup Dry Marsala wine
0.25 cup Low-sodium chicken broth
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Season the chicken breasts with sea salt and black pepper on both sides.
Heat the olive oil in a large skillet over medium-high heat.
Place the chicken in the skillet and sear for 5-6 minutes per side until golden brown and cooked through, then transfer to a plate.
In the same skillet, add the sliced mushrooms and minced shallots, sautéing for 5 minutes until the mushrooms are tender and browned.
Add the minced garlic to the skillet and cook for 30 seconds until fragrant.
Pour in the Marsala wine and chicken broth, using a wooden spoon to scrape up any browned bits from the bottom of the pan.
Simmer the sauce for 3-5 minutes until it has reduced by half and thickened slightly.
Return the chicken to the skillet, spooning the mushroom sauce over the top to coat.
Garnish with freshly chopped parsley and serve immediately.
