Garlic Shrimp with Roasted Sweet Peppers
Sautéed shrimp tossed with aromatic garlic and vibrant roasted sweet peppers, served over a bed of fluffy quinoa for a zesty and satisfying meal.
INGREDIENTS
8 oz shrimp
1 cup mini sweet peppers
1 tbsp extra virgin olive oil
0.5 cup cooked quinoa
2 cloves garlic
0.25 tsp sea salt
0.25 tsp black pepper
0.25 tsp red pepper flakes
1 tbsp fresh parsley
1 tbsp lemon juice
PREPARATION
Preheat your oven to 400F and line a small baking sheet with parchment paper.
Slice the mini sweet peppers into thin rings and toss them with 1 teaspoon of the olive oil on the prepared baking sheet.
Roast the peppers for 12-15 minutes until they are tender and slightly charred at the edges.
While the peppers roast, heat the remaining olive oil in a large skillet over medium-high heat.
Pat the shrimp dry with paper towels and add them to the skillet, seasoning with sea salt, black pepper, and red pepper flakes.
Sauté the shrimp for 2 minutes per side until they are pink and opaque, then stir in the minced garlic and roasted peppers for 1 minute.
Remove the skillet from the heat and stir in the fresh lemon juice and chopped parsley to brighten the flavors.
Serve the garlic shrimp and peppers over the warm cooked quinoa and enjoy immediately.
