PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Wash and dice the Yukon gold potato into 1/2-inch cubes and trim the ends off the fresh green beans.
Mince the garlic cloves and whisk them in a small bowl with the extra virgin olive oil, dried rosemary, dried thyme, sea salt, and black pepper.
Toss the diced potatoes on the baking sheet with half of the garlic-herb oil mixture and roast for 15 minutes.
