Add the ground turkey to the skillet, breaking it apart with a wooden spoon, and cook until browned and no longer pink.
Stir in the diced red bell peppers and yellow onions, then season the entire mixture with sea salt, black pepper, smoked paprika, and garlic powder.
Continue to sauté for another 3-4 minutes until the vegetables are softened and fragrant.
Use a spoon to create two small wells in the turkey and potato mixture and carefully crack one egg into each well.
Reduce the heat to medium, cover the skillet with a lid, and cook for 3-5 minutes until the egg whites are set but the yolks are still runny.
Remove from heat, garnish with freshly chopped parsley, and serve immediately straight from the skillet.
