6.5 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
2 tbsp Plain Nonfat Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets and minced garlic in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Add the green beans to the steamer for the last 5 minutes of cooking until they are crisp-tender and bright green.
While vegetables steam, pat the salmon dry with a paper towel and season with a pinch of salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
