Seared Salmon with Steamed Green Beans and Herb Roasted Sweet Potato
Pan-seared salmon fillet served with herb-roasted sweet potato cubes and crisp-tender green beans, finished with a squeeze of fresh lemon for a bright, zesty finish.
INGREDIENTS
6.5 oz Wild Atlantic Salmon fillet
80g Sweet Potato, cubed
100g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 tbsp Fresh Lemon Juice
Pinch of dried rosemary and sea salt
PREPARATION
Preheat your oven to 400°F (200°C) and line a small baking sheet with parchment paper.
Toss the cubed sweet potatoes with half of the olive oil, dried rosemary, and a pinch of sea salt.
Spread the potatoes on the baking sheet and roast for 20-25 minutes until tender and slightly browned.
While potatoes roast, place a steamer basket over boiling water and steam the green beans for 5-7 minutes until crisp-tender and bright green.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Season the salmon with salt and sear skin-side down for 4-5 minutes, then flip and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Plate the seared salmon alongside the roasted sweet potatoes and steamed green beans.
Drizzle the entire plate with fresh lemon juice before serving.
