Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared wild sockeye salmon paired with tender-crisp garlic green beans and nutty brown rice, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Sockeye Salmon fillet
1/2 cup cooked Brown Rice
1.5 cups fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Fresh lemon wedge for serving
PREPARATION
Prepare the brown rice according to package instructions and set aside.
Pat the salmon fillet dry with a paper towel and season with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until your desired level of doneness is reached, then remove from the pan.
In the same skillet, add the remaining oil and the trimmed green beans.
Sauté the beans for 3-4 minutes, then add the minced garlic and cook for 1 minute more until fragrant and tender-crisp.
Plate the seared salmon alongside the brown rice and garlic green beans, finishing with a fresh squeeze of lemon juice.
