Seared Salmon with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with tender steamed asparagus and creamy garlic-infused mashed cauliflower, finished with a bright squeeze of lemon.
INGREDIENTS
7 oz Wild Salmon Fillet
1.5 cups Cauliflower florets
1 cup Asparagus spears
1 tbsp Extra Virgin Olive Oil
2 Garlic cloves
1 tbsp Lemon juice
PREPARATION
Bring a pot of water to a boil with a steamer basket inserted.
Steam the cauliflower florets for 10-12 minutes until very soft and easily pierced with a fork.
While cauliflower steams, heat half of the olive oil in a non-stick skillet over medium-high heat.
Season the salmon fillet with salt and pepper, then sear in the skillet for 4-5 minutes per side until golden and cooked to your preference.
Remove the cauliflower from the steamer and add the asparagus spears, steaming for 3-5 minutes until tender-crisp and bright green.
Place the steamed cauliflower in a blender or food processor with the minced garlic, the remaining olive oil, and a pinch of salt; blend until completely smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the asparagus on the side with a fresh squeeze of lemon juice.
