1/2 tsp Cumin
1/4 tsp Red Pepper Flakes
PREPARATION
Preheat your oven to 400°F and line a large baking sheet with parchment paper.
Toss the cauliflower florets with one teaspoon of olive oil, turmeric, and cumin until evenly coated.
Spread the cauliflower on the baking sheet and roast for 15 minutes.
While cauliflower roasts, prepare the glaze by mixing the finely chopped dried figs with a splash of water and red pepper flakes in a small bowl.
Move the cauliflower to one side of the pan and place the salmon fillet on the other side.
Spread the spicy fig mixture over the top of the salmon.
Return the pan to the oven and roast for another 10 to 12 minutes until the salmon is cooked through and the cauliflower is tender.
In the final two minutes, toss the fresh spinach onto the pan or into a warm skillet with the remaining olive oil until just wilted.
