Herb Beef & Roasted Vegetable Bowl
Sautéed lean ground beef and fiber-rich beans served over fluffy quinoa with a vibrant medley of oven-roasted broccoli and peppers.
INGREDIENTS
3 oz Ground beef (93% lean)
0.5 cup Cooked quinoa
0.5 cup Black beans
1 cup Broccoli florets
0.5 cup Red bell pepper
0 tsp Olive oil
0.5 tsp Garlic powder
0.5 tsp Onion powder
0.5 tsp Dried oregano
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets and diced red bell pepper with olive oil and half of the garlic and onion powder.
Spread the vegetables in a single layer and roast for 15 minutes until tender and slightly charred.
While vegetables roast, place a large skillet over medium heat and brown the ground beef until no pink remains.
Stir the black beans, cooked quinoa, dried oregano, black pepper, and the remaining garlic and onion powder into the skillet.
Cook the beef and grain mixture for 3-4 minutes, stirring frequently to allow the flavors to meld and the beans to heat through.
Divide the beef and grain mixture into a bowl and top with the roasted broccoli and peppers.
Garnish with freshly chopped parsley and serve immediately.
