Seared Salmon Fillet with Garlic Green Beans and Cauliflower Mash
Pan-seared wild salmon served over creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.5 oz Wild Sockeye Salmon Fillet
1.5 cups Cauliflower florets
1 cup fresh Green Beans
1 tbsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Lemon Juice
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, trim the ends of the green beans.
Heat half of the olive oil in a skillet over medium heat and sauté the green beans and minced garlic until the beans are tender-crisp and bright green.
Remove the beans from the skillet and set aside.
Pat the salmon fillet dry with a paper towel and season with a pinch of salt and pepper.
Add the remaining olive oil to the skillet and sear the salmon for 4-5 minutes per side until golden and cooked through.
Drain the steamed cauliflower and mash or blend until smooth, seasoning with a touch of salt.
Plate the salmon over the cauliflower mash with the green beans on the side, and finish with a fresh squeeze of lemon juice.
