Chicken Marinara with Garlic Bread
Pan-seared chicken breast simmered in a rich tomato marinara, served over tender zucchini noodles with a side of crispy, buttery garlic bread.
INGREDIENTS
5 oz Chicken breast
0.5 cup Marinara sauce
1 slice Whole grain bread
0.5 tbsp Ghee
1 tsp Olive oil
1 tbsp Parmesan cheese
1 cup Zucchini
1 clove Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Dried oregano
PREPARATION
Season the chicken breast evenly on both sides with sea salt and black pepper.
Heat the olive oil in a medium skillet over medium-high heat and sear the chicken for 5-6 minutes per side until golden brown and fully cooked.
Remove the chicken from the skillet and let it rest on a cutting board; in the same skillet, add the marinara sauce and dried oregano, simmering on low heat.
In a separate small pan, lightly sauté the spiralized zucchini for 2-3 minutes until just tender but still firm to the bite.
Mince the garlic clove and mix it with the ghee in a small bowl, then spread the mixture evenly over the slice of whole grain bread.
Place the bread in a toaster oven or under a broiler for 2 minutes until the edges are crispy and the garlic ghee is melted.
Slice the rested chicken breast into strips and place them over the bed of sautéed zucchini noodles.
Ladle the warm marinara sauce over the chicken, sprinkle with parmesan cheese, and serve immediately with the warm garlic bread.
