Seared Salmon Fillet with Steamed Broccoli and Cauliflower Mash
Pan-seared salmon fillet served over a velvety cauliflower mash with a side of tender steamed broccoli and a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon Fillet
1.5 cups Cauliflower florets
1 cup Broccoli florets
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
Sea salt and black pepper to taste
Fresh lemon wedge
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
While cauliflower is steaming, add the broccoli florets to the steamer for the last 5 minutes of cooking until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Once hot, add the salmon skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference.
Transfer the steamed cauliflower to a blender or food processor with the minced garlic and a pinch of salt. Pulse until smooth and creamy.
Plate the cauliflower mash, top with the seared salmon, and serve with the steamed broccoli and a fresh lemon wedge.
