Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Place the chicken breast between two sheets of plastic wrap and pound to an even half-inch thickness.
Season both sides of the chicken with sea salt and black pepper.
In a shallow bowl, whisk the egg until smooth.
In a separate shallow bowl, combine the almond flour, nutritional yeast, and garlic powder.
Dip the chicken breast into the egg wash, then press into the almond flour mixture until fully coated.
Heat the olive oil in a non-stick skillet over medium heat and sear the chicken for 2-3 minutes per side until the coating is golden.
Transfer the seared chicken to the prepared baking sheet and spoon the marinara sauce over the top.
Sprinkle the mozzarella cheese over the sauce and bake for 10-12 minutes until the chicken is cooked through and the cheese is bubbly.
While the chicken bakes, lightly sauté the zucchini noodles in the same skillet for 2 minutes until just tender.
Plate the zucchini noodles and top with the crispy chicken parmesan.
Finish with a sprinkle of grated parmesan cheese before serving.
