Seared Salmon with Garlic Green Beans and Sweet Potato Mash
Pan-seared salmon fillet served with garlicky green beans and smooth sweet potato mash, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Wild Atlantic Salmon
150g Sweet Potato
100g Green Beans
1 tsp Extra Virgin Olive Oil
1 tsp Ghee
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water until tender, approximately 10-12 minutes.
Drain the sweet potato and mash thoroughly with the ghee and a pinch of sea salt until the texture is smooth and creamy.
While the potato boils, heat half of the olive oil in a skillet over medium heat and sauté the green beans with minced garlic until they are tender-crisp.
Season the salmon fillet on both sides with sea salt and cracked black pepper.
Heat the remaining olive oil in a separate non-stick skillet over medium-high heat.
Place the salmon skin-side down in the hot skillet and sear for 4-5 minutes until the skin is golden and crispy.
Carefully flip the salmon and cook for an additional 2-3 minutes until the fish is opaque and flakes easily with a fork.
Plate the seared salmon alongside the sweet potato mash and garlic green beans, serving immediately with a fresh lemon wedge.
