Savory Herb Roasted Pork Tenderloin
Tender pork tenderloin roasted with a fragrant rosemary-thyme rub, served alongside caramelized Brussels sprouts and carrots for a satisfying, savory finish.
INGREDIENTS
8 oz pork tenderloin
1 tbsp extra virgin olive oil
1 cup Brussels sprouts
0.5 cup carrots
0.5 tsp dried rosemary
0.5 tsp dried thyme
0.25 tsp garlic powder
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Pat the pork tenderloin dry with paper towels to ensure a good sear.
In a small bowl, combine the dried rosemary, dried thyme, garlic powder, sea salt, and black pepper.
Trim and halve the Brussels sprouts and slice the carrots into 1/2-inch rounds.
Place the vegetables on one side of the baking sheet, drizzle with half of the olive oil and a pinch of the herb mixture, then toss to coat.
Rub the remaining olive oil and the rest of the herb mixture all over the pork tenderloin.
Place the pork on the other side of the baking sheet and roast for 20-25 minutes, or until the internal temperature reaches 145°F.
Remove from the oven and let the pork rest for 5 minutes before slicing into medallions to serve with the roasted vegetables.
