Oven-roasted salmon fillet topped with a zesty herb-mustard crust, served alongside charred broccoli florets for a vibrant and satisfying meal.
INGREDIENTS
7 oz Salmon fillet
1.5 cups Broccoli florets
1 tsp Extra virgin olive oil
1 tbsp Dijon mustard
1 tbsp Fresh parsley
1 tbsp Fresh dill
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 whole Lemon
PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
Arrange the broccoli florets on one side of the baking sheet and toss with the olive oil and half of the sea salt and black pepper.
Place the salmon fillet on the other side of the baking sheet and spread the Dijon mustard evenly across the top of the fish.
In a small bowl, combine the finely chopped fresh parsley and dill, then press the herb mixture firmly into the mustard layer on the salmon.
Season the salmon with the remaining sea salt and black pepper.
Slide the tray into the oven and roast for 12 to 15 minutes until the salmon is opaque and flakes easily with a fork.
Remove from the oven and squeeze the fresh lemon juice over the salmon and broccoli before serving immediately.
