PREPARATION
Season the chicken breast evenly on both sides with half of the sea salt and black pepper.
Heat half of the olive oil in a large skillet over medium-high heat. Once the pan is hot, add the chicken and sear for 5-6 minutes per side until golden brown and the internal temperature reaches 165°F.
Remove the chicken from the skillet and set aside to rest on a plate.
In the same skillet, add the remaining olive oil and the trimmed broccolini. Sauté for 3-4 minutes, adding a tablespoon of water to create steam, until the broccolini is tender-crisp and slightly charred. Remove and set aside.
Reduce the heat to medium and add the halved cherry tomatoes, chopped kalamata olives, capers, and minced garlic to the skillet. Sauté for 2 minutes until the tomatoes begin to soften and release their juices.
Stir in the lemon juice and fresh parsley, scraping up any browned bits from the bottom of the pan to incorporate into the relish.
