Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon fillets served with charred broccoli florets and creamy garlic-infused mashed cauliflower for a satisfying, buttery finish.
INGREDIENTS
5.2 oz Salmon Fillet
1.5 cups Broccoli Florets
2 cups Cauliflower Florets
1 tbsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with half of the olive oil and a pinch of sea salt on the prepared baking sheet.
Roast the broccoli for 15-20 minutes until the edges are slightly charred and the stems are tender.
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very soft.
Transfer the steamed cauliflower to a food processor or bowl and blend with minced garlic and the remaining olive oil until smooth.
Heat a non-stick skillet over medium-high heat and season the salmon fillet with salt and pepper.
Sear the salmon for 4-5 minutes on the first side, then flip and cook for another 3-4 minutes until golden and flaky.
Serve the seared salmon over a bed of the garlic mashed cauliflower with the roasted broccoli on the side.
