5.75 oz raw sushi-grade salmon
0.5 cup cooked sushi rice
1 tbsp rice vinegar
0.25 whole avocado
0.25 cup cucumber
2 sheets nori
1 tbsp coconut aminos
0.25 tsp sea salt
1 tsp sesame seeds
PREPARATION
Prepare the sushi rice by gently folding in the rice vinegar and sea salt while it is still slightly warm, then let it cool to room temperature.
Slice the raw sushi-grade salmon into long, thin strips approximately half an inch thick.
Peel and slice the avocado into thin wedges and cut the cucumber into thin matchsticks.
Place one nori sheet on a bamboo rolling mat and spread half of the rice in a thin, even layer, leaving one inch clear at the top edge.
Arrange half of the salmon, avocado, and cucumber in a horizontal line across the center of the rice.
Carefully roll the nori from the bottom up, using the mat to keep it tight, and seal the edge with a drop of water.
Use a very sharp knife to slice the roll into six even pieces and repeat with the second nori sheet.
Sprinkle with sesame seeds and serve with coconut aminos for dipping.
