Seared Salmon with Garlic Green Beans and Wild Rice
Pan-seared salmon fillet served over nutty wild rice and garlic-sautéed green beans, featuring a perfectly crisp skin.
INGREDIENTS
6.5 oz Wild Salmon Fillet
0.5 cup Cooked Wild Rice
1 cup Fresh Green Beans
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
0.5 tbsp Fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Cook the wild rice according to package instructions until tender and set aside.
Pat the salmon fillet completely dry with a paper towel and season both sides with sea salt and black pepper.
Heat a non-stick skillet over medium-high heat with half of the olive oil.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crisp, then flip and cook for another 2-3 minutes.
In a separate small skillet, heat the remaining olive oil over medium heat and add the minced garlic, sautéing for 30 seconds until fragrant.
Add the green beans to the garlic skillet with a splash of water, cover, and steam-sauté for 4-5 minutes until tender-crisp.
Plate the salmon over the wild rice with the green beans on the side, finishing the entire dish with a fresh squeeze of lemon juice.
