Seared Salmon and Shrimp Pasta with Roasted Broccoli
Pan-seared salmon and succulent shrimp tossed with whole wheat pasta and charred broccoli, finished with a squeeze of fresh lemon and a hint of garlic for a bright, zesty finish.
INGREDIENTS
3 ounces Salmon Fillet
4 ounces Shrimp, peeled and deveined
1 ounce Dry Whole Wheat Pasta
1 cup Broccoli florets
0.5 teaspoon Olive Oil
1 clove Garlic, minced
1 tablespoon Lemon Juice
PREPARATION
Preheat your oven to 400°F and line a small baking sheet with parchment paper.
Toss the broccoli florets with a tiny spray of oil and a pinch of salt, then roast for 15-18 minutes until the edges are slightly charred.
While the broccoli roasts, bring a pot of salted water to a boil and cook the whole wheat pasta according to package directions until al dente.
Pat the salmon and shrimp dry with a paper towel and season with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side down and cook for 4 minutes, then flip and add the shrimp and minced garlic to the pan.
Cook the shrimp for 2 minutes per side and the salmon for another 2-3 minutes until both are cooked through.
Drain the pasta, reserving a tablespoon of pasta water.
Toss the cooked pasta, roasted broccoli, and lemon juice into the skillet with the seafood and garlic.
Gently mix everything together using the reserved pasta water to coat the noodles and serve immediately.
