While the vegetables roast, whisk the large eggs and liquid egg whites together in a medium bowl until frothy and well combined.
Heat a non-stick skillet over medium-low heat. Add the roasted vegetables and the rinsed black beans to the pan, stirring for 1 minute to warm the beans.
Pour the egg mixture into the skillet. Using a silicone spatula, gently push the eggs from the edges toward the center, creating soft curds.
When the eggs are nearly set but still slightly moist, sprinkle the feta cheese over the top and remove the pan from the heat.
