Preheat your oven to 400°F and line a baking sheet with parchment paper.
Dice the potatoes into small 1/2-inch cubes and place them in a bowl.
Toss the potatoes with 0.75 tsp of olive oil and half of the sea salt, black pepper, garlic powder, and onion powder.
Spread the potatoes in a single layer on the baking sheet and roast for 25 minutes, or until golden and crispy.
While the potatoes roast, heat the remaining 0.75 tsp of olive oil in a large skillet over medium-high heat.
Add the ground turkey to the skillet along with the remaining sea salt, black pepper, garlic powder, and onion powder.
Cook the turkey for 8 to 10 minutes, breaking it into small crumbles with a spatula, until it is fully browned and cooked through.
Prepare the base of your bowl by adding the mixed greens, halved cherry tomatoes, sliced cucumber, and minced red onion.
Add the cooked turkey crumbles and the roasted potato cubes to the bowl.
Top with chopped sugar-free pickles and drizzle the entire bowl with yellow mustard before serving.
