Preheat your oven to 400°F (200°C).
Clean the cremini mushrooms and slice them into halves or quarters depending on size.
On a parchment-lined baking sheet, toss the mushrooms with the extra virgin olive oil, half of the sea salt, and half of the black pepper.
Roast the mushrooms in the oven for 15-20 minutes until they are golden brown and tender.
While the mushrooms roast, season the chicken breast with the remaining salt and pepper.
Heat a skillet over medium-high heat and sear the chicken for approximately 6-7 minutes per side, or until the internal temperature reaches 165°F.
In a small saucepan or the same skillet used for the chicken (after removing the meat), melt the ghee over medium heat.
Add the minced garlic to the ghee and sauté for 1 minute until fragrant, being careful not to burn it.
Remove the roasted mushrooms from the oven and toss them into the garlic-ghee mixture.
Stir in the fresh parsley and lemon juice to brighten the flavors.
Slice the chicken and serve it topped with a generous portion of the roasted garlic butter mushrooms.
