Add the ground turkey to the skillet, breaking it up with a spatula. Season with sea salt, black pepper, garlic powder, oregano, and smoked paprika.
Cook the turkey until it is browned and cooked through, about 5-7 minutes.
Toss in the diced red bell pepper and sauté for another 3 minutes until the peppers are slightly softened and charred.
Add the fresh baby spinach to the pan and stir until it just begins to wilt.
Create two small wells in the turkey and vegetable mixture and crack one egg into each well.
Reduce the heat to medium-low, cover the skillet with a lid, and cook for 3-4 minutes, or until the egg whites are set but the yolks remain runny.
Slide the mixture onto a plate and serve immediately.
