INGREDIENTS
5 oz Chicken breast
1 tbsp Arrowroot powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Sesame oil
1 cup Broccoli florets
2 tbsp Coconut aminos
1 tsp Rice vinegar
1 tsp Honey
1 tsp Fresh ginger
1 clove Garlic
0.25 tsp Red pepper flakes
0.5 cup Cooked brown rice
1 tsp Sesame seeds
PREPARATION
Cut the chicken breast into 1-inch bite-sized pieces.
In a medium bowl, toss the chicken with arrowroot powder, sea salt, and black pepper until evenly coated.
In a small jar, whisk together the coconut aminos, rice vinegar, honey, minced ginger, minced garlic, and red pepper flakes.
Heat the sesame oil in a large skillet over medium-high heat.
Add the chicken to the skillet and cook for 5-6 minutes until golden brown and cooked through.
Add the broccoli florets and 2 tablespoons of water to the skillet, then cover with a lid for 2 minutes to steam the broccoli.
Remove the lid and pour the sauce over the chicken and broccoli, stirring constantly for 1 minute until the sauce thickens and becomes sticky.
Serve the chicken and broccoli over the warm cooked brown rice and garnish with sesame seeds.
