INGREDIENTS
6 oz Grass-fed sirloin steak
1 tbsp Ghee
2 cloves Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 cup Asparagus
PREPARATION
Remove the steak from the refrigerator 20 minutes before cooking to bring it to room temperature.
Pat the steak completely dry with paper towels and season both sides with the sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until it is very hot.
Place the steak in the skillet and sear for 3 to 4 minutes per side until a deep golden-brown crust forms.
Reduce the heat to medium and add the ghee, smashed garlic cloves, rosemary, and thyme to the pan.
Tilt the pan slightly and use a large spoon to continuously baste the steak with the melted herb ghee for 2 minutes.
Remove the steak from the pan and let it rest on a cutting board for at least 5 to 10 minutes to lock in the juices.
While the steak rests, toss the asparagus into the same pan and sauté for 4 to 5 minutes until bright green and tender.
