Sheet Pan Lemon Herb Salmon
Fresh salmon fillets roasted on a single pan with crisp asparagus and juicy tomatoes, finished with a bright and zesty lemon-herb drizzle.
INGREDIENTS
6.5 oz Salmon fillet
1.5 cup Asparagus spears
0.5 cup Cherry tomatoes
1 tsp Extra virgin olive oil
1 tsp Dried oregano
0.5 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
1 medium Lemon
PREPARATION
Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper for easy cleanup.
Trim the woody ends off the asparagus and place the spears on the sheet pan along with the cherry tomatoes and the salmon fillet.
Drizzle the extra virgin olive oil over the salmon and vegetables.
In a small bowl, mix the dried oregano, garlic powder, sea salt, and black pepper, then sprinkle the mixture evenly over everything on the pan.
Slice half of the lemon into thin rounds and arrange them on top of the salmon fillet.
Roast in the oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork and the asparagus is tender-crisp.
Squeeze the juice from the remaining lemon half over the entire dish before serving immediately.
