Dice the chicken breast into small, even bite-sized pieces and season with the sea salt and black pepper.
Heat a large skillet or wok over medium-high heat and add half of the toasted sesame oil.
Add the chicken to the skillet and sauté until golden brown and fully cooked through, then remove the chicken and set it aside.
Add the remaining sesame oil to the same skillet along with the diced carrots, minced garlic, and grated ginger, cooking until the carrots are slightly tender.
Push the vegetables to the side of the pan and crack the egg into the center, scrambling it quickly until it is just set.
Incorporate the chilled cooked brown rice, frozen peas, and the cooked chicken back into the skillet, breaking up any clumps of rice with a spatula.
Drizzle the tamari over the mixture and toss everything together for 2 to 3 minutes until the rice is heated through and starts to get slightly crispy.
Garnish the dish with sliced green onions and serve immediately while hot.
