Seared Salmon with Garlic Green Beans and Wild Rice
Pan-seared wild salmon served over nutty wild rice with a side of garlic-sautéed green beans, finished with a squeeze of zesty fresh lemon.
INGREDIENTS
5.3 oz Wild Atlantic Salmon
0.5 cup Cooked Wild Rice
1.5 cups Fresh Green Beans
2 tsp Avocado Oil
2 cloves Garlic, minced
1 tbsp Fresh Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Prepare the wild rice according to package instructions using water or vegetable broth and set aside.
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat one teaspoon of avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145 degrees Fahrenheit.
Remove the salmon from the pan and let it rest on a plate.
In the same skillet, add the remaining teaspoon of avocado oil and the trimmed green beans.
Sauté the green beans for 5-6 minutes until tender-crisp, adding the minced garlic during the last minute of cooking.
Deglaze the pan by squeezing fresh lemon juice over the green beans.
Serve the seared salmon over the warm wild rice with the garlic green beans on the side.
