Oven-roasted salmon fillet topped with a fragrant herb crust, served alongside caramelized sweet potatoes and crisp kale for a vibrant, nutrient-dense meal.
INGREDIENTS
7 oz Salmon fillet
0.5 medium Sweet potato
1 stalk Celery
1 cup Kale
0.5 tbsp Olive oil
0.25 tsp Dried oregano
0.25 tsp Dried thyme
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Peel and dice the sweet potato into 1/2-inch cubes and thinly slice the celery stalk.
Toss the sweet potato and celery on the baking sheet with half of the olive oil and a pinch of sea salt.
Roast the vegetables in the oven for 15 minutes until they begin to soften.
While vegetables roast, season the salmon fillet with dried oregano, dried thyme, sea salt, black pepper, and lemon juice.
Remove the tray from the oven, move the vegetables to one side, and place the salmon fillet and chopped kale on the other side.
Drizzle the remaining olive oil over the kale and massage it slightly to soften the leaves.
Return the tray to the oven and roast for an additional 10 to 12 minutes until the salmon is flaky and the kale is perfectly crisp.
