120g Sweet Potato, cubed
100g Asparagus spears
1.5 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Greek Yogurt

PREPARATION
Preheat your oven to 400°F (200°C).
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Trim the woody ends of the asparagus and place them on a baking sheet, tossing with half of the olive oil, salt, and pepper.
Roast the asparagus in the oven for 10-12 minutes until tender and slightly charred.
While the vegetables cook, pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F.
Drain the sweet potatoes and mash them thoroughly, stirring in the Greek yogurt for a creamy consistency.
