Seared Salmon Fillet with Steamed Asparagus and Garlic Mashed Cauliflower
Pan-seared salmon fillet served with tender steamed asparagus and garlic-infused mashed cauliflower, blended until silky smooth.
INGREDIENTS
5.5 oz Salmon Fillet
250g Cauliflower florets
150g Asparagus spears
2 tsp Olive Oil
2 tbsp Non-fat Greek Yogurt
2 cloves Garlic
PREPARATION
Steam the cauliflower florets and garlic cloves until very tender, about 10-12 minutes.
While cauliflower steams, trim the woody ends off the asparagus and steam them for 4-5 minutes until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan, skin-side down, and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
Transfer the steamed cauliflower and garlic to a blender or food processor with the Greek yogurt and pulse until silky smooth.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed asparagus on the side.
