Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon served alongside garlic green beans and brown rice, finished with a squeeze of lemon and a skin that is perfectly crispy.
INGREDIENTS
7 ounces Salmon Fillet
0.5 cup Cooked Brown Rice
1 cup Green Beans
1 teaspoon Olive Oil
1 clove Garlic
1 teaspoon Lemon Juice
PREPARATION
Pat the salmon dry with paper towels and season with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is golden and crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached then remove from the pan.
In the same skillet add the remaining oil and minced garlic sautéing until fragrant.
Toss in the green beans and a splash of water covering the pan to steam them until they are tender-crisp.
Serve the salmon and garlic green beans over a bed of warm brown rice with a fresh squeeze of lemon juice.
