Deconstructed Sushi Rice Bowl
Sautéed wild-caught shrimp and creamy avocado served over nutty brown rice with crisp cucumbers and a zesty ginger-tamari dressing.
INGREDIENTS
8 oz wild-caught shrimp
0.5 cup cooked brown rice
0.25 cup shelled edamame
0.5 cup sliced cucumber
0.25 whole avocado
1 sheet nori seaweed
1 tbsp tamari
1 tsp rice vinegar
0.5 tsp grated fresh ginger
1 tsp toasted sesame oil
1 tsp black sesame seeds
PREPARATION
In a small bowl, whisk together the tamari, rice vinegar, grated ginger, and sesame oil to create the dressing.
Sauté the shrimp in a non-stick pan over medium heat for 2-3 minutes per side until pink and opaque.
Place the warm brown rice in the center of a shallow bowl as the base.
Arrange the cooked shrimp, edamame, sliced cucumber, and avocado slices around the rice.
Use kitchen shears to cut the nori sheet into thin strips and sprinkle them over the top of the bowl.
Drizzle the prepared ginger-tamari dressing over the ingredients and garnish with black sesame seeds before serving.
