2 large Portobello mushroom caps
6 oz Ground turkey
1 oz Feta cheese
1 large Egg
1 cup Fresh spinach
1 tsp Olive oil
1 clove Garlic
0.25 tsp Dried oregano
0.25 tsp Sea salt

Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper.
Clean the mushroom caps with a damp cloth, remove the stems, and brush the outside of the caps with olive oil.
Finely chop the mushroom stems and sauté them in a small skillet with minced garlic and spinach until the spinach is fully wilted.
In a medium mixing bowl, combine the ground turkey, egg, sautéed vegetable mixture, dried oregano, sea salt, and black pepper.
Spoon the turkey mixture evenly into the hollowed mushroom caps and top each with crumbled feta cheese.
Bake for 25 to 30 minutes until the turkey is cooked through and the cheese is bubbly and lightly browned.
