Pat prawns dry with paper towels and season with sea salt and black pepper.
Heat a large skillet over medium-high heat and melt 0.5 tbsp of ghee.
Add the asparagus and cherry tomatoes to the skillet, sautéing for 3-4 minutes until the asparagus is crisp-tender and tomatoes are slightly blistered.
Remove vegetables from the pan and set aside on a plate.
In the same skillet, melt the remaining 1 tbsp of ghee.
Add the prawns in a single layer, searing for 2 minutes per side until pink and opaque.
Stir in the minced garlic during the last minute of cooking, being careful not to burn it.
Deglaze the pan with lemon juice, tossing the prawns to coat in the garlic butter sauce.
Return the vegetables to the pan briefly to warm through, then garnish with fresh parsley and serve.
