Lemon-Dill Salmon Bites with Roasted Asparagus
Salmon cubes pan-seared to a golden crispness and tossed with fresh dill and lemon, served alongside tender oven-roasted asparagus spears.
INGREDIENTS
6.5 oz Salmon fillet
1.5 cups Asparagus spears
1 tsp Extra virgin olive oil
1 tsp Fresh dill
0.5 tsp Lemon zest
1 tbsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
PREPARATION
Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper.
Trim the woody ends off the asparagus and place the spears on the baking sheet.
Drizzle the asparagus with half of the olive oil and season with a pinch of the sea salt and black pepper.
Roast the asparagus for 12 to 15 minutes until tender and slightly charred at the tips.
While the vegetables roast, cut the salmon fillet into 1-inch cubes and pat them very dry with a paper towel.
Season the salmon bites evenly on all sides with the garlic powder and the remaining sea salt and black pepper.
Heat the remaining olive oil in a large non-stick skillet over medium-high heat until shimmering.
Add the salmon bites to the skillet in a single layer and sear for 2 to 3 minutes per side until a golden crust forms.
Turn off the heat and immediately toss the salmon with the lemon zest, lemon juice, and chopped fresh dill.
Arrange the roasted asparagus on a plate and top with the warm lemon-dill salmon bites.
