INGREDIENTS
6.5 oz Salmon Fillet
120g Sweet Potato
150g Green Beans
1 tsp Olive Oil
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in a pot of water for 10-12 minutes until fork-tender.
Drain the water and mash the sweet potato with a pinch of sea salt until smooth and creamy.
Season the salmon fillet with salt and pepper on both sides.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until golden.
Remove the salmon and add the remaining oil to the same pan along with the green beans and minced garlic.
Sauté the green beans for 5 minutes until tender-crisp and fragrant.
Serve the seared salmon over the sweet potato mash with the garlic green beans on the side.
