Seared Salmon with Steamed Asparagus and Garlic Cauliflower Mash
Pan-seared salmon served over a creamy garlic cauliflower mash with tender steamed asparagus, finished with a squeeze of bright lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower Florets
1 cup Asparagus spears
1 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Greek Yogurt
1 clove Garlic, minced
Salt, pepper, and lemon to taste
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, trim the woody ends of the asparagus and steam them for 4-5 minutes until bright green and tender-crisp.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat olive oil in a non-stick skillet over medium-high heat. Place salmon skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until reached desired doneness.
Drain the steamed cauliflower and place in a blender or food processor with minced garlic and Greek yogurt. Blend until smooth and creamy.
Plate the garlic cauliflower mash, top with the seared salmon, and serve with the steamed asparagus on the side.
Finish with a fresh squeeze of lemon juice over the entire plate.
