Seared Salmon with Steamed Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with a side of steamed green beans, finished with a squeeze of zesty fresh lemon.
INGREDIENTS
7.5 oz Wild Atlantic Salmon
2 cups Cauliflower Florets
1 cup Green Beans
1 tsp Ghee
1 clove Garlic
Salt, pepper, and lemon to taste
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
While cauliflower steams, trim the green beans and steam them for 5-7 minutes until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat a non-stick skillet over medium-high heat with half of the ghee.
Place the salmon skin-side down in the hot skillet and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until desired doneness is reached.
Drain the steamed cauliflower and place it in a food processor or blender with the remaining ghee, minced garlic, salt, and pepper.
Pulse the cauliflower until smooth and creamy like mashed potatoes.
Plate the cauliflower mash, top with the seared salmon, and serve the steamed green beans on the side with a fresh lemon wedge.
