Chicken and Cheese Quesadilla
Pan-seared chicken and sautéed peppers folded into a crisp whole wheat tortilla with melted sharp cheddar for a gooey and satisfying finish.
INGREDIENTS
5 oz Boneless skinless chicken breast
1 oz Sharp cheddar cheese
1 medium Whole wheat tortilla
0.25 cup Red bell pepper
0.25 cup Yellow onion
1 tsp Extra virgin olive oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Cumin
0.25 tsp Garlic powder
PREPARATION
Dice the chicken breast into small, even bite-sized pieces.
Heat half the olive oil in a skillet over medium-high heat and add the chicken, seasoning with sea salt, black pepper, cumin, and garlic powder.
Cook the chicken until golden brown and cooked through, then remove from the pan.
Add the remaining oil to the pan and sauté the diced bell peppers and onions until they are tender and slightly charred.
Wipe the skillet clean and place the tortilla in the pan over medium heat.
Sprinkle half the cheese on one side of the tortilla, top with the cooked chicken and sautéed vegetables, then sprinkle the remaining cheese over the filling.
Fold the tortilla in half and cook for 2-3 minutes per side until the exterior is golden brown and the cheese is completely melted.
Slice into wedges and serve immediately.
