Golden Chicken Coconut Curry
Sautéed chicken breast simmered in a fragrant, golden turmeric coconut sauce with vibrant bell peppers and spinach for a creamy, nourishing finish.
INGREDIENTS
5 oz Chicken breast
0.5 tbsp Olive oil
3 tbsp Full-fat coconut milk
0.25 cup Cooked brown rice
0.5 cup Red bell pepper
1 cup Baby spinach
1 clove Garlic
1 tsp Fresh ginger
1 tsp Turmeric powder
0.5 tsp Ground cumin
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 cup Water
PREPARATION
Cut the chicken breast into bite-sized cubes and season with sea salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat.
Add the chicken to the skillet and sear for 4-5 minutes until golden brown on all sides.
Add the sliced red bell pepper, minced garlic, and grated ginger to the pan, sautéing for another 2 minutes until fragrant.
Stir in the turmeric and cumin, coating the chicken and vegetables evenly to toast the spices.
Pour in the coconut milk and water, stirring to combine and scraping up any browned bits from the bottom of the pan.
Reduce the heat to low and simmer for 5-7 minutes until the sauce has thickened slightly and the chicken is cooked through.
Fold in the baby spinach and stir until just wilted.
Serve the curry over the warm cooked brown rice.
