PREPARATION
Preheat oven to 400°F and line a large baking sheet with parchment paper.
Dice the yellow potato into 1-inch cubes and finely mince the garlic clove.
In a medium bowl, toss the potato cubes with 0.5 tbsp olive oil, minced garlic, rosemary, and half of the sea salt and black pepper.
Spread the potatoes in a single layer on the prepared baking sheet and roast for 15 minutes.
While potatoes roast, rub the chicken breast with the remaining 0.5 tbsp olive oil, dried thyme, and the remaining salt and pepper.
Remove the baking sheet from the oven, move potatoes to one side, and add the chicken breast and green beans to the other side.
Return the pan to the oven and roast for another 18-20 minutes until the chicken reaches an internal temperature of 165°F and potatoes are fork-tender.
