1.5 cups Cauliflower Florets
1 cup Fresh Green Beans
2 tsp Extra Virgin Olive Oil
3 tbsp Non-fat Plain Greek Yogurt
2 cloves Garlic, minced
PREPARATION
Place cauliflower florets and garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add the Greek yogurt and a pinch of salt, and blend until smooth and velvety.
Steam the green beans for 5-6 minutes until they are bright green and crisp-tender, then set aside.
