In a small bowl, whisk together the whole eggs and the liquid egg whites until well combined.
Add the baby spinach to the skillet with the turkey and sauté for 1 minute until just wilted.
Reduce the heat to medium-low, pour in the egg mixture, and add the remaining salt and pepper.
Gently scramble the eggs with a spatula until they are just set and fluffy.
Transfer the roasted potatoes to a plate, top with the turkey and egg scramble, and garnish with freshly chopped chives.
