Spread the vegetables in a single layer and roast for 18 minutes until the sweet potatoes are tender and golden-brown.
While the vegetables roast, heat the remaining avocado oil in a large non-stick skillet over medium heat.
Add the ground turkey to the skillet, breaking it into small crumbles with a spatula, and cook until browned and no longer pink.
In a medium bowl, whisk together the whole eggs and egg whites until the mixture is well combined.
Lower the skillet heat to medium-low and pour the egg mixture over the turkey, stirring gently for a soft scramble.
Once the eggs are nearly set, fold in the fresh baby spinach and the roasted vegetables from the oven.
Season with black pepper and serve immediately while hot.
