Herb-Crusted Salmon with Roasted Asparagus
Roasted salmon fillet topped with a zesty herb and Dijon crust, served alongside tender asparagus for a vibrant and nutrient-dense dinner.
INGREDIENTS
7 oz Wild-caught salmon fillet
1 bunch Asparagus spears
0.5 tbsp Extra virgin olive oil
1 tsp Dijon mustard
1 tbsp Fresh parsley
1 tbsp Fresh dill
1 tsp Lemon zest
1 tsp Lemon juice
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat oven to 400°F (200°C) and line a large baking sheet with parchment paper.
Trim the woody ends off the asparagus and place them on one side of the baking sheet.
Drizzle the asparagus with olive oil and sprinkle with half of the sea salt and black pepper; toss to coat.
Pat the salmon fillet dry with a paper towel and place it on the other side of the baking sheet.
In a small bowl, combine the finely chopped parsley, dill, lemon zest, and garlic powder.
Brush the top of the salmon with Dijon mustard, then press the herb mixture firmly onto the mustard to create a crust.
Season the salmon with the remaining sea salt and black pepper.
Roast for 12-15 minutes, or until the salmon is flaky and the asparagus is tender and slightly charred.
Serve immediately with a fresh drizzle of lemon juice.
