Pan-Seared Salmon with Garlic Spinach
Crispy pan-seared salmon fillet served over a bed of vibrant garlic-infused spinach with a bright squeeze of fresh lemon.
INGREDIENTS
7 oz Salmon fillet
2 tsp Olive oil
2 clove Garlic
3 cup Baby spinach
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Lemon juice
0.5 tsp Lemon zest
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with sea salt and black pepper.
Heat one teaspoon of olive oil in a non-stick skillet over medium-high heat until shimmering.
Place the salmon skin-side down in the pan and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until opaque and flaky, then remove from the pan.
Add the remaining teaspoon of olive oil and minced garlic to the pan, sautéing for 30 seconds until fragrant.
Add the baby spinach to the pan, tossing constantly until just wilted and bright green.
Stir in the lemon juice and lemon zest, then plate the spinach and top with the seared salmon.
